Caramel Tart Recipe

Back in May, I posted about making my son some Caramel Tarts.  I promised a recipe when we were all unpacked again so here it is:

It is from a very old ‘community’ cook book made to mark 100 years for something, that I ‘inherited’ along the way. The recipe is credited to a Mrs T Newman – thanks Mrs T!



CARAMEL MERINGUE TART

PASTRY      (Enough for 2 tart shells)

11/2 cups of SR Flour
Pinch of salt
1 egg
2 Tblspn sugar
1/4 lb of butter
1 Tblspn milk

METHOD:
Rub butter into flour, sugar and salt and mix well.
Beat the egg well and add the milk
Add milk and egg to the flour mix and mix well.
Press into greased tart plates and bake in a good oven.

CARAMEL FILLING   (Only enough for one)
1 Tblspn flour
Pinch of salt
!/2 cup brown sugar
1 cup milk
1 Tblspn butter
vanilla essence

Put flour, salt and sugar in a saucepan and mix with half of the milk.
Beat egg yolks, add other half of milk and mix into ingredients in saucepan. 
Add butter, place over fire, stirring all the time.  When nearly boiling, stir vigorously or it will go lumpy.
Flavour with essence, and pour into tart shell.
Beat egg whites until stiff,
Sweeten and flavour to taste and spread over filling.
Place in oven for a few minutes to brown





Don’t you love the ‘pinch’ of salt, the ‘good’ oven, placing it over a ‘fire’!

I suggest you make your own decisions re the ingredients you use, check your manual for the temperature for your oven and DONT put it over a fire!!

I love this type of recipe collection – tried and true by someone in your community – they were very popular in smaller communities and were often used as a money raising venture for schools etc

Caramel Meringue Love

I was visiting with my son and family and somehow the conversation came to “things Nanny used to cook for Dad when he was a boy”. 

One of the things I mentioned was a Caramel Meringue Tart and was horrified when number one and only son had no recollection of said tarts and even suggested that I must have taken them somewhere else!

I have to admit that I was a tad hurt that he so easily forgot my efforts, so when he phoned to say they were coming to visit, I thought I’d surprise him!

Now, I haven’t made anything like this for many years, but retrieved that old faithful recipe and set to work.  I made it using normal flour etc ie it was not Gluten Free (that ensured that Nanny and Poppy wouldn’t be having any taste tests!)

Anyway, this was the final result!  Looks pretty good doesn’t it and

to ensure no further ‘memory loss’ I made two!!


Yep, I think I can safely say that there will not be any memory lapses in the future – they used all the right adjectives!!

I did manage to sneak away a serve to take to my Mum and Dad too.

I’d love to share the recipe but it is packed up with the rest of the house (leaking water pipe, excessive damage, repairs ongoing) – if there is enough interest, I will share it when all returns to normal.

My efforts might not win me any prizes but I think I did OK. Do you make anything for ‘special’ occasions at your house? I would love to hear from you!

Potato Bag Test

Today is test time for the Microwave Potato Bag so PJ and I are going to have a ‘spud’!  It is so long since we have had potato, I am quite looking forward to it!

Now Nanny is no Master Chef but this is what I decided on:

1. Wash the potatoes

2. Without drying, pop them into the Potato Bag – no need to pierce them either!


3. Depending on your microwave cook on high – I had 4 small potatoes and I cooked them for 10 mins.

4. While they are cooking, brown off onion and garlic, add meat and brown, added diced tomatoes, tomato paste then some ginger and some bean mix.

5.  Remove potatoes – they look perfect!!

6. Split and top with meat mixture, grated cheese and sour cream.  Serve with a salad.

The potatoes were cooked to perfection!  Yayyy the Microwave Potato Bag is a great success!!
The meal looks OK too  – and it tasted fantastic!!

Nanny and PJ both  rate the Microwave Potato Bag – guess I’ll be making more of these for family when they see this!

You could even take it to the table to serve – it would look fun on the BBQ table!!  What do you think – will you give it a try?

Blueberry Muffin

Today I am going to share a recipe that has become a favourite in the Nanny and Poppy household – 

The 2 minute Blueberry Muffin!!

I found this recipe when I was exploring Paleo thanks to Delighted Momma and it has provided us with that great dessert or easy breakfast.

I had to test and taste a few times to work out the ‘right mix’ for me but that is just one of the wonderful things about this recipe – so easy to adapt to individual taste!

The Recipe:
  • 3 Tbs of almond meal
  • 2 Tbs of apple sauce
  • 1 Tbs of honey (this is way too sweet for me – I use 1 teaspn)
  • 1 egg
  • 3 Tbs fresh blueberries (I have tried frozen mixed berries too)
  • 1 teaspn vanilla (I don’t like vanilla)
  • 1/2 teaspn baking powder
  • dash of salt (I don’t use salt)
What you do:

1.  Measure all into a bowl (I keep the berries till later so I don’t squash them)



2. Mix well

3.  Add the blueberries

4.  Pop your bowl in your new Microwave Bowl Holder


5.  Cook in microwave on High for 2 minutes (it will look a bit uncooked in the centre but that is OK) 

6.  I like to add a dollop of yoghurt and a few more fresh blueberries 

DID I TELL YOU HOW GOOD THIS IS????????????  The proof is in the eating!!

Rock Cakes No More…..

On a roll in the kitchen so I thought I would try this new recipe for Gluten Free Scones, provided by the Coeliac Society.

Poppy tried it first and produced ‘rock cakes’ so I thought I needed to show him that I still ‘rule’ in my kitchen how it’s done!

So simple:

3 cups of GF flour
150g water mixed with
150g cream

It very quickly became obvious to me that there had been a mistake in the printing of the recipe (I have no idea how Poppy even got it formed into his rock cakes!!!)
I quickly mixed another batch of water and cream, tipped it in and ended up with it being a bit wet…  that’s OK – I just didn’t want to ‘play’ with it too much anyway.  😉
This meant it was too wet to ‘cut’ scones, so I left it in a block and ‘scored’ it.

I did forget to brush the tops but don’t tell…..shhh    it just meant they were a bit pale – the flour brushed off

They were the best scones we have had since going GF!!!!!  Light and fluffy and not THAT GF texture that we all know and dread….  YUMMMMMY!!

Next time I will make it 250g of each water and cream and add it a bit at a time till I think it’s the right consistency!  Let me know if you try them!
