Rock Cakes No More…..

On a roll in the kitchen so I thought I would try this new recipe for Gluten Free Scones, provided by the Coeliac Society.

Poppy tried it first and produced ‘rock cakes’ so I thought I needed to show him that I still ‘rule’ in my kitchen how it’s done!

So simple:

3 cups of GF flour
150g water mixed with
150g cream

It very quickly became obvious to me that there had been a mistake in the printing of the recipe (I have no idea how Poppy even got it formed into his rock cakes!!!)
I quickly mixed another batch of water and cream, tipped it in and ended up with it being a bit wet…  that’s OK – I just didn’t want to ‘play’ with it too much anyway.  😉
This meant it was too wet to ‘cut’ scones, so I left it in a block and ‘scored’ it.

I did forget to brush the tops but don’t tell…..shhh    it just meant they were a bit pale – the flour brushed off

They were the best scones we have had since going GF!!!!!  Light and fluffy and not THAT GF texture that we all know and dread….  YUMMMMMY!!

Next time I will make it 250g of each water and cream and add it a bit at a time till I think it’s the right consistency!  Let me know if you try them!
