GF Anzac Biscuits

ANZAC day calls for some Anzac Biscuits so Nanny is getting up off her – chair- and heading to the kitchen…..

Now to get a recipe – think I’ll go with the good old Commonsense Cookery Book  (can you see how much it has been used?? )    😉

ANZAC BISCUITS( page 170)

Ingredients
1 cup rolled oats
3/4 cup coconut
1 cup flour
1.5 teaspoons bicarbonate of soda
2 tablespoons boiling water
1 cup sugar
1/2 cup butter
1 tablespoon golden syrup

Method
1. Mix oats, flour, sugar and coconut together
2. Melt syrup and butter together
3. Mix soda with boiling water and add to melted butter and syrup
4. Add to dry ingredients
5. Place 1 tablespoon of mixture on greased tin
6. Bake in slow oven 20 minutes

OK we can’t have oats so introducing quinoa flakes!! (If you squint they will pass for rolled oats!!!)
and the flour will have to be Gluten Free……

and as for the sugar and butter, well I didn’t say anything about low fat or low sugar did I !!!!

Now if all goes to plan, I will be able to take some of these around to share with Mum and Dad for afternoon tea …….

Waiting, waiting, waiting

and TA DA!!!!       Nanny’s Gluten Free Anzac Biscuits !!!!   They look great don’t they??

And Dad ate them so I guess they passed the Yummy test!!!
