Hot Cross Fun

As you know by now, Poppy is a Coeliac and he really misses some things, so, with the family gathering for Easter, I thought I would try to make him some Hot Cross Buns!  I searched Pinterest and any that looked interesting needed a bread maker or a recipe book that I didn’t have, so off to my pile of recipe books I went…

I came across this recipe in a printout from the company that produces one of the best bread mixes we have found (and no, I’m not getting paid to say that!!), Laucke. So I decided I would start my research with this recipe and decided to share my test runs with you!

 

The recipe:
1x500g pack Easy Bakers Special  White Pre-mix
200g mixed fruit
1 Tablespn sugar
1 Tablespn oil
340ml cool water
1-2 teaspns mixed spice
I decided to increase the mixed spice to 2 teaspns and add 2 teaspns of cinnamon.
You take out 50g of the bread mix to use for the crosses. Put the rest in the large mixing bowl and add sugar,oil,mixed spice,cinnamon and water and mix thoroughly on high speed for 1 min. (2mins if doing by hand)
Put into well greased muffin tins.

 

I thought I may have over filled them but continued!  They had to sit for approx 25-35 mins in a warm spot.

 

Maybe they didn’t rise enough (but I didn’t want them to overflow so went with them) On the right, you can see the plastic bag holding the 50gs of bread mix that has been mixed to a smooth paste with water.  I snipped the corner and did the crosses!

 

Then I popped them in the oven (preheated to 210C) for 15-20mins

 

They didn’t want to come out of the pan but we got there in the end!  I then brushed them with a syrup glaze made by boiling 1 cup of water with 1/2 cup sugar.

 

Then it was time to surprise Poppy!!

 

 

It doesn’t look too bad, does it?  Of course it looked even better with butter on it!!

Poppy Test :  Yes he liked them!!  I say them because you can never get the taste with just one ……

 

If you try them, let me know what you think – maybe between us we can get this GF Hot Cross Bun sorted!!

    They look good! My recipe (which is not gluten free) uses milk and butter rather than water and oil. Maybe that would give you a richer flavour?
